But then I remember that even if you as a BTC seller have your own node, the BTC buyer can provide no payment details at all and it does not matter what you or bisq do to make the auto-confirm work, since there is no obligation for BTC buyer to set the correct details.

No, there's no way. Maybe it's worth to request that feature and discuss it.
Sometimes auto-confirm fails though, so it does not guarantee a perfect trade.
